Ingredients
- 1 medium eggplant
- 1/2 lb. hamburger meat
- 5 Tbsp. butter
- 1/2 c. chopped onion
- 1/4 c. chopped bell pepper
- 2 c. cooked rice
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. bread crumbs (if seasoned, omit salt and pepper)
Directions

1Peel and boil eggplant for 10 to 15 minutes.

2Drain and mash with a fork.

3Brown meat, pepper, onion and seasonings in 3 tablespoons butter.

4Stir in eggplant and rice.

5Pour into a greased 10 x 6 x 2-inch pan.

6Top with crumbs and remaining butter.

7Bake for 20 minutes at 375°.
