- 2 bunches parsley (remove stalks)
- 1 c. bulgur (cracked wheat grade 1)
- juice of 2 lemons
- 2 tomatoes, diced very fine
- 1/2 onion, chopped very fine
- salt to taste
- 1/2 tsp. allspice
Directions

1Chop parsley in food processor; put in salad bowl (chop fine). Chop onion and add to parsley.

2Add diced tomatoes.

3Wash bulgur; drain water and add to parsley.

4Add rest of ingredients; toss.

5Adjust salt to taste.

6Bulgur will soften after about 15 to 20 minutes.
