  • 2 bunches parsley (remove stalks)
  • 1 c. bulgur (cracked wheat grade 1)
  • juice of 2 lemons
  • 2 tomatoes, diced very fine
  • 1/2 onion, chopped very fine
  • salt to taste
  • 1/2 tsp. allspice

Directions

    Chop parsley in food processor; put in salad bowl (chop fine). Chop onion and add to parsley.

    Add diced tomatoes.

    Wash bulgur; drain water and add to parsley.

    Add rest of ingredients; toss.

    Adjust salt to taste.

    Bulgur will soften after about 15 to 20 minutes.
