- 1 bunch parsley
- 3 tomatoes
- 1 bunch scallions
- 1 tsp. dried mint or 4 tsp. chopped fresh
- 1 tsp. cumin
- 1 tsp. coriander
- 1 tsp. allspice
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/2 c. lemon juice
- 1/4 c. olive oil
Directions

1Soak cracked wheat in water for 30 minutes.

2Dice parsley, scallions and tomatoes.

3Squeeze out cracked wheat and mix with spices, lemon juice and oil.

4Add diced vegetables and mix thoroughly.
