- 1 cup uncooked bulgur or cracked wheat
- 3/4 cup diced onion
- 1/3 cup fresh lemon juice
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon salt
- 1 garlic clove, minced
Directions

1Place parsley and mint in a food processor; process until finely minced. Combine parsley mixture, cucumber, and remaining ingredients in a large bowl; toss well. Cover and marinate in refrigerator at least 4 hours.
