- 1 cup bulgur
- 2 cups water
- 1 env. GOOD SEASONS Garlic & Herb Dressing Mix
- 1/4 cup lemon juice
- 2 Tbsp. water
- 1/2 cup oil
- 2 large tomatoes, chopped
- 1 can (15 oz.) chickpeas (garbanzo beans), drained, rinsed
- 1/2 cup finely chopped fresh parsley
- 1/2 cup thinly sliced green onions
- 1/2 cup fresh mint leaves
Directions

1Cook bulgur in the 2 cups water as directed on package.

2Meanwhile, prepare dressing mix with lemon juice, 2 Tbsp.

3water and the oil as directed on envelope; set aside.

4Drain bulgur, if necessary; place in large bowl.

5Add tomatoes, beans, parsley, onions and mint; mix lightly.

6Stir in prepared dressing; cover.

7Refrigerate several hours or until chilled.

8Stir before serving.
