- 1 c. cracked wheat
- 1 bunch green onions
- 2 large bunches parsley
- 1/2 bunch mint
- 4 large tomatoes
- 1/2 c. olive or vegetable oil
- salt and pepper to taste
- juice of 4 lemons
Directions

1Soak wheat in cold water for at least 1/2 hour. Squeeze dry by pressing between palms of hands.

2Chop onions, parsley, mint leaves and tomatoes very fine.

3Add wheat, lemon juice, oil, salt and pepper. Mix well. Serve with fresh lettuce leaves, grape leaves or steamed cabbage leaves.

4The leaves are to be used like scoops. Serves 6.
