Ingredients

  • 1 c. cracked wheat (bulgar)
  • 2 bunches parsley, chopped (leaves only)
  • 1 Tbsp. chopped mint (fresh or dried)
  • 2 bunches green onions, chopped (including green tops)
  • 1 large cucumber, chopped fine
  • 1/2 c. olive oil
  • 1/2 c. canola oil
  • 1 c. lemon juice
  • 1 tsp. salt

Directions

    Soak wheat in 2 cups lukewarm water while preparing other ingredients. After chopping all ingredients, drain excess water from heat.

    Combine all ingredients, cover and allow to set overnight. Stir again before serving.

    This will serve about 10 to 12.
