Ingredients

  • Bulger Wheat - 1 Cup
  • Parsley - chopped very finely
  • Scallions - about 3 stalks, sliced very finely
  • Lemon Juice - 1/4 Cup
  • Tomatoes - cut into pieces
  • Cucumber - cut into pieces
  • Peppers - red, green, yellow - 1/3 each - cut into pieces
  • Garlic Salt - dash
  • Olive Oil - 1/8 - 1/4 Cup
  • Mint (optional)

Directions

    1. Put 1 Cup Bulgur Wheat in a large Sauce Pan or bowl

    2. Add 11/2 tsp of salt to the bulbur
  3. 3
    3. Pour 11/2 Cups boiling water over the Bulgur

    4. Cover and let sit for 30 minutes

    5. Stir in lemon juice, olive oil, and garlic powder
  6. 6
    6. Refrigerate for 2-3 hours

    7. Add remaining ingredients and mix well
