- 2/3 c. fine bulghur wheat
- 2 bunches parsley
- 1 bunch fresh mint
- 1 bunch scallions
- 5 medium tomatoes, chopped fine
- 1/2 c. lemon juice
- 1/3 c. oil
- 1 1/2 tsp. salt
- 1/2 tsp. allspice
Directions

1Wash bulghur wheat and soak in water and set aside.

2Pick parsley and mint leaves, no stems, chop very fine.

3Chop scallion very fine.

4Mix in bowl with tomatoes and all spices and seasonings.

5Drain all the water from the wheat and add it (wheat) to the chopped vegetables.

6Mix well and adjust seasonings to taste.
