- 1 c. medium bulgar wheat
- 1/3 c. lemon juice
- 2 Tbsp. olive oil
- 1 medium clove garlic, minced
- 1/2 tsp. salt
- 1/4 tsp. crushed mint leaves
- 1 medium tomato, diced
- 6 Tbsp. chopped parsley
- 1/4 c. sliced green onions
- romaine lettuce
Directions

1Pour 2 1/2 cups boiling water over bulgar; let stand 15 to 20 minutes.

2Drain well.

3To make dressing, stir together lemon juice, olive oil, garlic, salt and mint leaves.

4Toss bulgar with dressing, tomato, parsley and green onions.

5Cover and refrigerate 4 hours to blend flavors.

6Serve salad on a platter lined with romaine leaves.

7Makes 4 1/2 cups.
