  • 1 1/4 c. raw bulgur wheat
  • 1 1/4 c. minced parsley
  • 3/4 c. minced mint
  • 3/4 c. minced onion
  • 1 c. chickpeas, drained (optional)
  • 3 tomatoes, chopped (optional)
  • 3/4 c. lemon juice
  • 1/3 c. olive oil
  • 1 tsp. salt

Directions

    Pour 4 cups boiling water over bulgur wheat; let stand 2 hours.

    Drain well.
