- 1 1/4 c. minced parsley
- 3/4 c. minced mint
- 3/4 c. minced onion
- 1 c. chickpeas, drained (optional)
- 3 tomatoes, chopped (optional)
- 3/4 c. lemon juice
- 1/3 c. olive oil
- 1 tsp. salt
Directions

1Pour 4 cups boiling water over bulgur wheat; let stand 2 hours.

2Drain well.

3Mix with other ingredients.

4Chill at least 1 hour.

5Serve over lettuce or in pocket pita bread.
