Ingredients
- 1/2 c. lemon juice
- 1/2 c. olive oil
- 1/2 c. bulgur (fine cracked wheat)
- bunch of parsley (1 c.)
- bunch of scallions (1/2 c.)
- 1 red onion
- 2 medium green peppers
- 5 medium tomatoes
- salt
- pepper
- chopped fresh mint leaves (1/2 c.)
Directions

1Mix lemon juice, olive oil and bulgur; set aside.

2The bulgur will absorb the liquid.

3Finely chop parsley and scallions, red onions and pepper.

4Mix together with bulgur mixture.

5Finely chop and add tomatoes.

6Add salt and pepper to taste.

7Refrigerate.

8You can use more or less of the different vegetables to suit your taste.
