Tabouleh (Salad)

Ingredients

  • 1/2 c. lemon juice
  • 1/2 c. olive oil
  • 1/2 c. bulgur (fine cracked wheat)
  • bunch of parsley (1 c.)
  • bunch of scallions (1/2 c.)
  • 1 red onion
  • 2 medium green peppers
  • 5 medium tomatoes
  • salt
  • pepper
  • chopped fresh mint leaves (1/2 c.)

Directions

    Mix lemon juice, olive oil and bulgur; set aside.

    The bulgur will absorb the liquid.

    Finely chop parsley and scallions, red onions and pepper.

    Mix together with bulgur mixture.

    Finely chop and add tomatoes.

    Add salt and pepper to taste.

    Refrigerate.

    You can use more or less of the different vegetables to suit your taste.
