Ingredients

  • 3 bunches parsley
  • 1 c. fine burghul (#1 cracked wheat)
  • 2-3 bunches scallion
  • 2 tomatoes, chopped fine
  • 1/2 c. lemon juice
  • 1/2 c. oil
  • Salt, pepepr to taste
  • 1 cucumber, peeled, cut in 4's

Directions

    Wash parsley & chop fine.

    In bowl, cover burghul with warm water to soak for 10 mins. Water will be absorbed.

    Combine parsley, soft, drained burghul and remainder of ingredients. Refrigerate.
