- 2 cucumbers, chopped
- 2 large tomatoes, chopped
- 4 green onions, chopped
- 1/3 c. crushed wheat (burghul)
- 2 c. water
- 1/3 c. lemon juice
- 1/3 c. olive oil
- 1/3 c. fresh mint
- 1 1/2 tsp. salt
Directions

1Wash parsley and drain.

2Soak crushed wheat in a large salad bowl with water for about 3 minutes.

3Drain and set aside.

4Remove stems from parsley and chop very fine.
