- 1/2 C bulgur wheat
- 6 green onions
- 1 lg bunch parsley
- several sprigs fresh mint or 1 tsp dried
- 3 lg ripe tomatoes
- DRESSING
- 5 Tbs fresh lemon juice
- 5 Tbs olive oil
- salt and pepper to taste
- 1/8 tsp allspice
- 1/8 tsp cinnamon
Directions

1Place the bulgur wheat in a bowl and cover with boiling water. Let stand for 30 minutes. Drain thoroughly.

2In the meantime chop all the vegetables or process them in a food processor. Don't let them get mushy,nor too finely chopped.

3Place vegetables in a large bowl.

4Add the drained bulgur and the dressing.

5Let it stand for several hours before serving to allow the flavors to blend.
