  • 2 cups boiling water

  • 14 cup lemon juice
  • 1 teaspoon garlic
  • 12 teaspoon mint, fresh
  • 14 cup olive oil
  • salt and pepper, to taste
  • 14 cup scallion, chopped (including greens)
  • 2 tomatoes, diced
  • 1 cup parsley, chopped
  • 12 cup chickpeas, canned
  • 1 cucumber, chopped

    Cook bulgur wheat.

    When it is done, add lemon juice, garlic, oil, mint, salt and pepper, and mix thoroughly.
