- 1 cup boiling water
- 1 cup fresh parsley, chopped
- 1/4 cup fresh mint leaves, chopped
- 4 tomatoes, diced
- 5 green onions, thinly sliced
- 2 tsp olive oil (add more to taste)
- 4-6 oz crumbled feta cheese
- juice of one lemon
- salt to taste
