Ingredients

  • 3 large bunches parsley
  • 1/3 c. cracked wheat
  • 2 c. water, warm
  • 1 1/2 bunches green onions
  • 2 large tomatoes
  • 1 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. lemon juice
  • 1/4 c. olive or corn oil

Directions

    Wash parsley; drain and shake out excess moisture.

    Soak cracked wheat in warm water in large bowl until it appears dry. Set aside.

    Remove stems from parsley; chop fine.

    Chop onions fine.

    Chop 1 celery stick fine.

    Dice tomatoes and 1 cucumber. Squeeze out excess water from cracked wheat and place in large bowl.

    Add the rest of the ingredients and mix well.

    Chill and serve.
