  • 1 lb. can refried beans
  • 6 to 8 jalapeno peppers
  • 3 medium ripe avocado, mashed in 2 Tbsp. lemon juice, 1/2 tsp. salt and 1/4 tsp. pepper
  • 1 c. sour cream
  • 1 1/2 c. mayo
  • 1 pkg. taco seasoning mix
  • 1 c. chopped green onions with tops
  • 3 medium tomatoes, chopped
  • shredded sharp cheese
  • 1 c. large pitted olives, sliced

    Layer refried beans in deep dish, 13 x 9-inch, or 2 small dishes.

    Chop in jalapeno peppers.

    Layer avocado.

    Mix together sour cream with mayo and taco seasoning mix and layer.

    Layer onions, tomatoes, cheese and olives.

    Refrigerate overnight.

    Serve with nacho chips.
