Ingredients

  • 2 lb. ground chuck
  • 1 pkg. chili seasoning
  • 2 cans Mexican or Italian tomatoes
  • 1 (10 oz.) pkg. yellow rice
  • 1 can Cheddar cheese or Nacho cheese soup
  • 2/3 c. milk
  • 1 c. grated Cheddar cheese

Directions

    Cook meat and drain.

    Add spices and tomatoes.

    Cook rice as directed on package.

    Layer 1/2 meat mixture in bottom of a 9 x 13-inch pan.

    Put a layer of rice on top.

    Add a layer of meat again.

    Heat soup with the milk and pour over mixture.

    Sprinkle with the Cheddar cheese.

    Bake at 350° for 15 minutes.

    Serve with Fritos, chopped tomatoes, onions, lettuce and sour cream.
