- 1/4 cups Onion, Diced
- 1 clove Garlic, Diced
- 1/2 cups Bell Pepper, Diced
- 16 ounces, weight Ground Beef, Lean
- 15 ounces, weight Can Rotel Diced Tomatoes With Green Chilies
- 1- 1/2 Tablespoon Taco Seasoning
- 9 whole Whole Wheat Lasagna Noodles (no-boil)
- 1 teaspoon Olive Oil
- 1 clove Garlic, Diced
- 15 ounces, weight Can Tomato Sauce
- 5- 1/2 teaspoons Ground Cumin
- 1 teaspoon Chili Powder
- 1 teaspoon Oregano
- 1 teaspoon Parsley
- 1 dash Sugar
- 1 cup Salsa
- 2 ounces, weight Shredded Lite Mexican Cheese
- 1/4 cups Greek Yogurt, Plain
- 1/4 cups Tomato, Diced
- 2 Tablespoons Black Olives, Diced
- 2 Tablespoons Jalapenos (diced, Optional)
- 3 Tablespoons Chopped Fresh Cilantro

1Preheat oven to 350 F.

2For the meat filling: In a skillet over medium heat add onion, garlic, bell pepper and ground beef.

3Cook until beef is no longer pink and vegetables are tender.

4Add the Rotel and taco seasoning.

5Cook until liquid is evaporated, about 5 minutes.

6Stir occasionally.
-
7When done, remove from heat and set aside.

8Meanwhile, make the red sauce.

9In a pot set over medium heat, add olive oil and 1 clove of garlic and cook for about 1 minute.

10Then, add the tomato sauce, cumin, chili powder, oregano, parsley and sugar.

11Cook for 10 minutes on low.

12Stir occasionally.

13Spoon a little bit of the red sauce on the bottom of a 9x13 baking dish.

14Start to layer: Add one layer (3 noodles) of lasagna noodles into the baking dish, add 1/2 of the beef mixture, 1/2 cup salsa, 1/3 of the remaining sauce.

15Add 3 more noodles on top, add the remaining beef mixture, remaining salsa and 1/3 of the sauce.

16Add last 3 noodles and top with remaining sauce and add the shredded cheese.

17Bake for 30 minutes.

18When done, let the lasagna sit for 5 minutes.

19Serve with additional toppings on top: cilantro, Greek yogurt, tomatoes and black olives.
