  • 1 (9 1/2-inch) pastry shell
  • 1 Tbsp. oil
  • 1/4 c. chopped onion
  • 1 large clove garlic, minced
  • 1/2 lb. lean ground beef
  • 1 to 2 tsp. chili powder
  • 1/2 tsp. dried oregano leaves
  • 1/2 tsp. salt
  • 1/8 tsp. cayenne
  • 1 Tbsp. catsup
  • few dashes of red pepper sauce
  • 3 eggs
  • 1 1/2 c. half and half
  • 1/2 tsp. salt
  • 2 Tbsp. canned, diced green chilies
  • 1 1/2 c. shredded Cheddar cheese
  • 1 c. shredded Jack cheese

    Bake pastry shell at 400° for 7 minutes.

    Heat oil in skillet. Saute onion and garlic until soft.

    Stir in ground beef, chili powder, oregano, salt, cayenne, catsup and red pepper sauce. Brown meat; break up into crumbly mixture.

    Drain off any liquid. Spoon into baked pie shell.

    Beat eggs.

    Mix in half and half, salt, chilies and cheese.

    Pour mixture over meat.

    Bake at 400° for 40 to 45 minutes until center is set and a knife comes out clean.
