Ingredients

  • 2 c. onions, chopped
  • 1 Tbsp. cooking oil
  • 2 lb. ground beef
  • 1 pkg. taco seasoning mix
  • 1 pkg. Ranch dressing mix
  • 4 (16 oz.) cans diced tomatoes
  • 1 (15 to 16 oz.) can pinto beans (undrained)
  • 1 (15 to 16 oz.) can red kidney beans (undrained)
  • 1 (16 oz.) can whole kernel corn
  • 1 (4 oz.) can green chilies
  • 1/2 tsp. salt

Directions

    Saut onions in oil.

    Add ground beef, stirring until browned. Drain off excess grease.

    Transfer ground beef and onion mixture to a large stockpot.

    Stir in taco seasoning and Ranch dressing mix. Add tomatoes, both beans, corn and salt.

    Bring mixture to a slow boil.

    After mixture begins cooking, reduce heat and simmer for 2 hours, stirring often.

    Garnish with shredded cheese and sour cream.
