Ingredients

  • 1 pound Ground Beef or Chicken Breasts
  • 1 can Black Beans
  • 1 can Kidney Beans
  • 1 can Diced Tomatoes & Green Chiles
  • 1 can Crushed Tomatoes
  • 1 can Beef or Chicken Broth
  • 1 can Corn
  • 1 1/2 - 2 cups Milk
  • 1 packet Taco Seasoning
  • 2 cups Shredded Cheddar Cheese (or 1/4 block Velveeta)

Directions

    Fully cook the beef or chicken, drain if needed.

    Combine all of the ingredients, except for the meat and cheese, in a large pot on the stove-top and stir. Bring the soup to a boil.

    Once the soup is boiling, bring to a simmer and add the meat and cheese. Cook until cheese is melted.

    Optional: Add some crushed tortilla chips or bits of soft tortillas to thicken. I like to use tortilla chips to dip with.
