Ingredients

  • 2 lbs lean ground beef
  • 2 tablespoons jalapenos, fresh and chopped (I use at least 2)
  • 3 cups beef broth
  • 2 cups V8 vegetable juice
  • 2 cups tomatoes, peeled, seeded and diced
  • 2 tablespoons chili powder
  • 1 teaspoon salt
  • 2 tablespoons cumin
  • 1 large onion, chopped
  • 3 garlic cloves, chopped
  • cheddar cheese, grated
  • scallion, sliced
  • corn tortilla strips
  • sour cream
  • salsa
  • avocado, sliced

Directions

    In a dutch oven or large kettle, fry ground beef.

    Add peppers, onion and garlic.

    Saute until tender.

    Add the tomatoes, broth, juice and seasonings.

    Bring to a boil.

    Reduce heat and simmer for 15 minutes.

    Pour soup into bowls.

    Garnish.
