Ingredients

  • 1 lb extra lean ground beef (such as Soy Crumbles) or 1 lb vegetarian beef substitute (such as Soy Crumbles)
  • 1 medium onion, chopped (optional)
  • 1 (15 ounce) can pinto beans
  • 1 (15 ounce) can black beans
  • 2 (15 ounce) cans tomatoes and green chilies
  • 1 (4 ounce) can green chilies, chopped
  • 1 (3 ounce) package taco seasoning mix
  • 1 (3 ounce) package hidden valley ranch dressing mix
  • 1 (15 ounce) can whole kernel corn

Directions

    Brown the ground meat and add onions.

    Cook till tender.

    Drain any fat.

    Add the Taco seasoning to the meat mixture and stir to combine.

    Now open those cans and add entire contents of all the canned items and the ranch dressing mix and stir to combine all ingredients.

    If it seems a little thick, add about a can of water and simmer for about 15-20 minutes (you can cook it longer if you like but it just needs to be heated through).
