  • 8 eggs, beaten
  • 2 Tbsp. finely chopped onion
  • 1 to 4 drops hot pepper sauce
  • 1/2 c. cooked taco-seasoned ground beef
  • 1/2 c. shredded Cheddar cheese
  • 2 Tbsp. finely chopped green pepper
  • flour tortillas
  • salsa (optional)

Directions

    In bowl, combine eggs, cheese, onion, green pepper and hot pepper sauce.

    Cook and stir in skillet until eggs are almost set. Add taco meat.

    Cook until eggs set.

    Spoon onto warmed tortilla and roll up.

    Top with salsa, if desired.
