  • 2 c. sugar
  • 1/2 c. light corn syrup
  • 3/4 c. water
  • few drops oil of clove
  • red food coloring

    Wash and dry 10 eating apples; insert a wooden skewer in blossom end of apple.

    Combine sugar, corn syrup and water in top of double boiler; cook over direct heat, stirring, until sugar dissolves.

    Add oil of cloves and little red food coloring. Continue cooking without stirring until a drop of mixture tested in cold water forms a hard piece that cracks easily (290° on candy thermometer).

    Set pan over boiling water.

    Dip each apple into syrup quickly.

    Remove and whirl apple until syrup covers.
