- 2 lb. ground beef
- 1 large onion, chopped
- 1 large can tomato juice
- 1 green pepper, chopped fine
- 8 oz. very fine noodles
- salt and pepper to taste
- 2 small cans tomato puree
- 1 clove garlic
- 1 small can mushrooms (whole or cut)
- 1 can cream-style corn
- 1/2 lb. grated cheese (sharp, Cheddar or Mozzarella)
Directions

1Brown meat in large pan; add onion, garlic and green pepper. Cook 5 to 10 minutes. Add mushrooms, juice, puree and corn. Bring to a boil and add noodles. Cook at a simmer about 10 minutes. (Stir frequently to keep from scorching.) Pour into greased baking dish not more than 2-inches deep. Sprinkle with cheese and bake at 400° for 20 to 30 minutes or until cheese is melted and slightly browned. Serves 15. Cut recipe in half for less. Will freeze well.
