- 1 lb. ground turkey
- 1 small onion, chopped
- 1/4 c. shiitake (mushrooms), soaked and chopped
- 1/2 c. bamboo shoots, chopped
- 1/4 tsp. salt
- 4 Tbsp. shoyu sauce
- 2 Tbsp. brown sugar
- 1 block tofu, cubed
- 2 eggs, beaten
Directions

1Brown turkey.

2Add onion, shiitake and bamboo shoots.

3Add salt, shoyu sauce and sugar.

4Cook until sugar and salt are dissolved and ingredients heated through.

5Line bottom of baking dish with tofu.

6Layer turkey mixture over tofu.

7Pour eggs over mixture.

8Bake at 350° for 30 to 40 minutes.
