Ingredients

  • 1 lb. ground turkey
  • 1 small onion, chopped
  • 1/4 c. shiitake (mushrooms), soaked and chopped
  • 1/2 c. bamboo shoots, chopped
  • 1/4 tsp. salt
  • 4 Tbsp. shoyu sauce
  • 2 Tbsp. brown sugar
  • 1 block tofu, cubed
  • 2 eggs, beaten

Directions

    Brown turkey.

    Add onion, shiitake and bamboo shoots.

    Add salt, shoyu sauce and sugar.

    Cook until sugar and salt are dissolved and ingredients heated through.

    Line bottom of baking dish with tofu.

    Layer turkey mixture over tofu.

    Pour eggs over mixture.

    Bake at 350° for 30 to 40 minutes.
