- 80 grams Chopped takana
- 2 Eggs
- 2 rice bowls' worth Cooked rice
- 1 tsp Usukuchi soy sauce
- 1 Salt and pepper
- 1 Vegetable oil
- 1 Red pickled ginger
Directions

1Crack the eggs into a bowl and beat.

2Squeeze the excess juice from the takana.

3Put vegetable oil in a frying pan, heat, then stir-fry the takana.

4Once they are cooked through, push to the side of the pan, then scramble the eggs in the same pan.

5Combine the takana with the eggs, add the rice, and stir-fry until evenly mixed.

6Season with salt and pepper (the takana are already seasoned, so taste and adjust).

7Drizzle in soy sauce from the edges of the frying pan, turn off the heat, then toss while hot.

8Transfer to a serving dish and serve with red pickled ginger.
