- 12 cup all-purpose flour
- 12 teaspoon baking powder
- 12 teaspoon ground cinnamon
- 14 teaspoon salt (optional)
- 1 12 cups chopped mixed dried fruit
- 23 cup oatmeal
- 13 cup chopped peanuts
- 6 eggs
- 23 cup firmly-packed brown sugar
- 12 cup chunky peanut butter
- 1 teaspoon vanilla
Directions

1Preheat oven to 350F.

2In medium bowl, stir together flour, baking powder, cinnamon and salt, if desired.

3Stir in fruit, oatmeal and peanuts and set aside.

4In large bowl, beat together eggs, sugar, peanut butter and vanilla until smooth.

5Stir in reserved flour mixture.

6Pour into greased 11 x 7 x 1 1/2-inch baking pan.

7Bake until cake tester inserted in center comes out clean, about 20 to 25 minutes.

8Cut into 12 bars, remove from pan and cool on wire rack.
