  • cooking spray
  • 12 cup all-purpose flour
  • 12 teaspoon baking powder
  • 12 teaspoon ground cinnamon
  • 14 teaspoon salt
  • 1 12 cups chopped dried fruit (apricots, cramberries, figs, dates, etc...)
  • 1 cup quick-cooking oatmeal
  • 13 cup chopped peanuts
  • 6 eggs
  • 23 cup brown sugar, packed
  • 12 cup peanut butter, chunky style
  • 1 teaspoon vanilla

Directions

    Preheat oven to 350F Spray a 9x9x2-inch baking pan with cooking spray; set aside.

    Combine flour, baking powder, cinnamon and salt in a medium bowl.

    Stir in dried fruit, oatmeal and peanuts; set aside.

    Beat together egg, brown sugar, peanut butter and vanilla in a large bowl until smooth.

    Stir in flour mixture.

    Pour into prepared pan.

    Bake in oven until cake tester or toothpick inserted in center comes out clean, about 20-25 minutes.

    Cool on wire rack.
