  • 2 medium talapia fillets
  • 1/2 cup fo light sour cream
  • icup fo canned or fresh chicken stock
  • 1 tsp. of cayenne
  • 1 tsp. of hot sauce
  • 2 garlic cloves minced
  • 1 small shallot minced
  • 2 tlb.of olive oil
  • 1tsp. of paprika 2 green onions chopped and salt and pepper. 1 package of fresh angel hair pasta.

    in large heavy skillet combine olive oil shallots and garlic, turn heat to medium and cook until transparent,then remove the veg. and keep olive oil . salt and pepper fish and add to medium heated olive oil. cook lightly on both sides, about a minute on each side, and remove to warm platter. add chicken stock and the rest of the seasonings and bring to a simmer, turn heat to very low and add sour cream and heat well and incooperate into stock , add fish , bring to slight simmer and cover for 3 to 5 min.adjust salt and pepper. serve over cooked angel hair pasta and top off with green onions.
