  • 2 c. crumbled cornbread
  • 1 (10 oz.) can enchilada sauce
  • 1 1/2 lb. ground beef
  • 1/2 tsp. salt
  • 1 (8 oz.) can tomato sauce
  • 1 c. shredded Monterey Jack cheese

    Combine cornbread, 1/2 cup enchilada sauce, salt and ground beef.

    Mix well.

    Shape into 1-inch balls.

    Place in shallow baking dish.

    Bake, uncovered, at 350° for 15 to 20 minutes.

    In a small saucepan, heat together tomato sauce and remaining enchilada sauce. Serve cooked meatballs topped with heated sauce and shredded cheese.
