- 2 c. crumbled cornbread
- 1 (10 oz.) can enchilada sauce
- 1 1/2 lb. ground beef
- 1/2 tsp. salt
- 1 (8 oz.) can tomato sauce
- 1 c. shredded Monterey Jack cheese
Directions

1Combine cornbread, 1/2 cup enchilada sauce, salt and ground beef.

2Mix well.

3Shape into 1-inch balls.

4Place in shallow baking dish.

5Bake, uncovered, at 350° for 15 to 20 minutes.

6In a small saucepan, heat together tomato sauce and remaining enchilada sauce. Serve cooked meatballs topped with heated sauce and shredded cheese.
