Tamale Pie

Ingredients

  • 8 small or 6 large tamales (try XLNT brand in deli section)
  • 1 1/4 lb. ground beef, browned and seasoned with salt, pepper, onion flakes, garlic powder and ground cumin
  • 1 large can diced mild green chilies
  • approximately 1 c. canned or frozen kernel corn
  • 3 small cans sliced black olives
  • 1 bunch green onions, chopped
  • 1 c. shredded Cheddar cheese
  • 3/4 c. tomato sauce or mild salsa

Directions

    Cut tamales into 1/2-inch slices and arrange in bottom of deep casserole (about 4-quart size).

    Layer with half the cooked ground beef.

    Sprinkle a layer of half the green chilies, half the corn, 1/2 the olives and 1/2 the onions.

    Repeat with tamale slices and so on.

    Top with shredded cheese and then an even covering of tomato sauce or salsa.

    Bake in a 350° oven, uncovered, for about an hour.

    Amounts of ingredients can be adjusted.

    Can be frozen and/or microwaved.
