- 2 each onions chopped
- 1/4 cup olive oil
- 1 cup tomatoes, canned chopped, drained
- 1 can corn niblets
- 1 tablespoon chili powder
- 1/2 teaspoon black pepper
- 1 each garlic cloves minced
- 1 pound ground beef, lean
- 1 can tamales cut into 1 inch chunks
- 1 can olives chopped or sliced
- 1/2 teaspoon salt
- 1/2 pound cheddar cheese, very old, sharp grated
Directions

1Sauteonions and garlic in 1/4 cup olive oil.

2Remove from pan.

3Add ground meat and brown, but do not break up too much.

4Remove excess fat and liquid from skillet.

5Return onions and garlic to pan.

6Add remaining ingredients and nix together.

7Transfer to a casserole dish.

8Top with about 1/2 pound grated sharp cheddar cheese.

9Bake, uncovered, for 1 hour at 350F (180C).

10Casserole may be frozen.

11Bring to room temperature and bake as directed but slightly longer.
