Ingredients

  • 3 Tbsp. chili powder
  • 3/4 c. yellow cornmeal
  • 1 1/4 c. milk
  • 1 egg, beaten
  • 1 lb. ground beef
  • 1 small onion
  • 2 cloves garlic
  • 1 (16 oz.) can tomatoes
  • 2 c. whole kernel corn
  • 1 c. cooked pinto or kidney beans
  • 1/2 c. ripe black olives, drained
  • 1 c. grated Cheddar cheese

Directions

    Mix together cornmeal, milk and egg.

    Brown the meat; add onions and garlic.

    Continue to saute until onions are soft.

    Stir in chili powder, tomatoes, corn, beans and olives.

    Heat for 5 additional minutes.

    Stir in the cornmeal mixture.

    Place in a 2 1/2-quart casserole and bake for 1 hour and 15 minutes at 350°. Sprinkle cheese on top and bake for 5 more minutes until cheese melts.

    Serves 6 to 8 for brunch, lunch or as dinner.

    Serve with wilted spinach salad, broccoli spears and avocado slices.
