- 1/2 c onion, finely chopped
- 2 cloves garlic, finely chopped or 1/2 tsp. garlic powder
- 1 lb. lean ground beef
- 1 tsp. chili powder
- 1 Tbsp. all purpose flour
- 1/2 tsp. salt
- 1/2 tsp. black pepper
- 1 can tomato paste
- 1 1/2 c. cornmeal
- 4 Tbsp. flour
- 1 tsp. chili powder
- 1/2 tsp. salt
- tomato juice
- water
Directions

1Brown onion and meat; add seasonings mixed with flour.

2Add tomato paste and simmer about 30 minutes.

3Cool and shape into tamales about 1 1/2 inches in diameter and 4 inches long.

4Mix cornmeal, flour, chili powder and salt together.

5Roll shaped tamales in dry mix.

6Place each tamale rolled in dry mix on a coffee filter and roll up.

7Place tamales in a heavy cooking pot and cover with equal parts of tomato juice and water.

8Simmer very slowly for 2 to 3 hours.

9Move tamales very gently occasionally to avoid sticking.
