  • 1/2 c onion, finely chopped
  • 2 cloves garlic, finely chopped or 1/2 tsp. garlic powder
  • 1 lb. lean ground beef
  • 1 tsp. chili powder
  • 1 Tbsp. all purpose flour
  • 1/2 tsp. salt
  • 1/2 tsp. black pepper
  • 1 can tomato paste
  • 1 1/2 c. cornmeal
  • 4 Tbsp. flour
  • 1 tsp. chili powder
  • 1/2 tsp. salt
  • tomato juice
  • water

Directions

    Brown onion and meat; add seasonings mixed with flour.

    Add tomato paste and simmer about 30 minutes.

    Cool and shape into tamales about 1 1/2 inches in diameter and 4 inches long.

    Mix cornmeal, flour, chili powder and salt together.

    Roll shaped tamales in dry mix.

    Place each tamale rolled in dry mix on a coffee filter and roll up.

    Place tamales in a heavy cooking pot and cover with equal parts of tomato juice and water.

    Simmer very slowly for 2 to 3 hours.

    Move tamales very gently occasionally to avoid sticking.
