Tapioca Cream Pudding

- 1/3 c. whole tapioca
- 1/2 c. sugar
- 2 c. milk
- 1/4 tsp. salt
- 2 eggs
- 1 tsp. vanilla
Directions

1In saucepan, bring 1 quart of water to a boil and add tapioca to boiling water; simmer for 1 1/2 hours.

2Drain water.

3In double boiler, put milk, salt and drained tapioca.

4Cook until tapioca is transparent (about 1 hour).

5Stir occasionally.

6Beat sugar into egg yolks and slowly stir into tapioca.

7Mix stiffly beaten eggs and add vanilla.

8Serves 4.
