Tapioca Pudding

Ingredients

  • 6 c. hot water
  • 6 Tbsp. tapioca
  • 1 c. sugar
  • 2 c. instant dry milk
  • dash of salt
  • 3 Tbsp. vanilla
  • 3 eggs, separated
  • 1/4 c. sugar
  • 1 tsp. vanilla

Directions

    Mix water, tapioca and 1 cup sugar.

    Let boil until clear. Mix together the dry milk, salt, 3 tablespoons vanilla and the egg yolks.

    Make sure to keep the egg whites.

    Mix some of the hot mixture into the dry ingredients.

    Stir remaining mixtures together.

    Let mixture come to a boil; let cool.

    Beat egg whites until foamy.

    Add 1/4 cup sugar and 1 teaspoon vanilla to whites. When mixture has cooled, fold in egg whites and serve.
