- 1 cup pearl tapioca (not instant)
- 4 cups whole milk
- 5 eggs (Separated)
- 34 cup white sugar
- 12 teaspoon vanilla
Directions

1Soak tapioca in 1 cup of the milk overnight in fridge.

2Add remaining milk and cook, stirring occasionally, in top of double boiler about 3 hours over medium low heat.

3Take off of heat.

4Beat egg yolks, sugar and vanilla together and add to tapioca and blend.

5Beat egg whites until stiff.

6Line a greased baking dish 9 x 9 with a layer of tapioca, egg white and repeat layer of tapioca and egg white.

7Bake in preheated oven of 325F for 15 minutes.
