Tapioca Pudding

Ingredients

  • 1 cup pearl tapioca (not instant)
  • 4 cups whole milk
  • 5 eggs (Separated)
  • 34 cup white sugar
  • 12 teaspoon vanilla

Directions

    Soak tapioca in 1 cup of the milk overnight in fridge.

    Add remaining milk and cook, stirring occasionally, in top of double boiler about 3 hours over medium low heat.

    Take off of heat.

    Beat egg yolks, sugar and vanilla together and add to tapioca and blend.

    Beat egg whites until stiff.

    Line a greased baking dish 9 x 9 with a layer of tapioca, egg white and repeat layer of tapioca and egg white.

    Bake in preheated oven of 325F for 15 minutes.
