- 6 (4-ounce) lamb loin chops, trimmed
- 3 garlic cloves, halved
- Cooking spray
- 3 tablespoons Dijon mustard
- 3/4 teaspoon dried tarragon
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground black pepper
- 1/4 teaspoon paprika

1Preheat broiler.

2Rub both sides of each lamb chop with garlic. Place chops on a broiler pan coated with cooking spray.

3Combine mustard, tarragon, salt, and pepper in a small bowl; spoon half of mustard mixture evenly over lamb. Broil 9 minutes. Turn; spoon remaining mustard over lamb. Sprinkle with paprika; broil 9 minutes.
