Tarragon Salad Dressing

  • 1 egg
  • 1 1/2 Tbsp. lemon juice
  • 1 1/2 Tbsp. white vinegar
  • 3/4 tsp. salt
  • 3/4 tsp. dry mustard
  • 3/4 tsp. sugar
  • 1/2 tsp. paprika
  • 1/2 tsp. tarragon
  • 1 c. salad oil

Directions

    Place egg in blender container or food processor.

    Add remaining ingredients, except oil.

    Cover and blend a few seconds. With motor running, slowly pour in salad oil, blending until smooth and thick, like mayonnaise.

    Makes almost 1 1/4 cups.

    Very good on chicken salad.
