- 3 eggs
- 2 lemons or limes
- 1 1/4 c. sugar
- 1/4 c. melted butter
- 1 unbaked pastry shell
- vanilla ice cream or Cool Whip
Directions

1Peel or zest colored outer peel, being careful not to get any pith or it will be bitter.

2Juice and strain the liquid.

3Put eggs, lemon zest and juice and sugar in blender.

4Process on high for 3 minutes.

5Add butter and process for 30 seconds.

6Pour mixture into pie shell.

7Bake at 350° for 30 to 35 minutes.

8Cool and chill. Serve with ice cream or Cool Whip.
