- salt and pepper
- 1 Tbsp. lemon juice
- cream or milk
- cornmeal
- 2 Tbsp. butter or margarine
Directions

1Rinse cleaned smelts thoroughly; wipe dry.

2Season the smelts with salt, pepper and lemon juice.

3Cover; allow them to stand for 15 minutes.

4Dip the smelts in cream or milk, then roll them in cornmeal.

5Fry the smelts gently in butter, until the fish flakes easily when tested with a fork.

6Place the cooked smelts on a platter.
