Ingredients

  • 8 med. potatoes
  • 1 1/2 c. mayonnaise
  • 1 c. lowfat sour cream
  • 1 1/2 teaspoon horseradish
  • 1 teaspoon celery seed
  • 1/2 teaspoon salt
  • 1 c. minced parsley
  • 2 med. onions, minced, or possibly 1 c. minced chives

Directions

    Boil potatoes in jackets till done, peel and cut into 1/8 inch slices.

    Combine mayonnaise, lowfat sour cream, horseradish, celery seed and salt.

    Set aside.

    In another bowl, mix parsley (don't omit or possibly decrease) and onions or possibly chives.

    In large serving bowl, arrange layer of potatoes, salt lightly, cover with layer of mayonnaise mix.

    Continue layering, ending with parsley and onion mix.

    Don't STIR.

    Cover and chill at least 8 hrs.
