Tea Party Lemon Bread

Ingredients

  • 1 1/2 c. all-purpose flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/2 c. margarine or butter
  • 1/2 c. homogenized milk
  • juice of 1 large lemon
  • 1 1/4 c. sugar
  • grated rind of 1 large lemon
  • 2 large eggs

    Mix dry ingredients thoroughly.

    Cream margarine, 3/4 cup sugar and lemon rind, then beat in eggs thoroughly, one at a time. Stir in flour mixture, alternately with milk, beginning and ending with flour.

    Stir until smooth after each addition.

    Turn into buttered 9 x 5 x 3-inch loaf pan and bake in 350° oven, about 45 minutes or until cake tester inserted in center of bread comes out clean.

    Stir 1/2 cup sugar and lemon juice together and spread over top of hot bread.

    Remove from pan after cooling, about 10 minutes.
