- 2 to 3 sprigs fresh mint
- 3 cups strong brewed mint tea
- Simple Syrup, recipe follows
- Fresh lemon juice
- 2 cups sugar
- 1 cup water
Directions

1Let the mint steep in the brewed tea for 30 minutes.

2Add the sugar syrup to make it very sweet.

3Add lemon juice to bring back the tea flavor and to reduce the sweetness.

4Freeze in an ice cream machine according to manufacturer's instructions.

5In a saucepan, combine sugar and water.

6Bring to a boil and simmer until sugar is dissolved, but no color is reached.

7Remove from the heat and let cool.
