  • 100 ml mirin (rice wine)
  • 100 ml kikoman soy sauce
  • 2 tablespoons brown sugar
  • 1 of 2 tablespoons of grated fresh ginger
  • Optional: spring onions

Directions

    Combine mirin, kikoman and sugar in a saucepan and boil until slightly thickened. Use it to marinate fish or meat. Pour over the used marinade when fish or meat is almost done, then add the fresh ginger. A spring onion garnish is tasty.
